Our Garden

Right outside of SWK is our organic garden. A wide range of vegetables, fruits, herbs, and edible flowers travel a matter of steps up to the kitchen to be transformed into various meals and cocktails. Our chef and gardener collaborate on plant types, varieties, and schedules, to ensure that we have a steady stream of interesting and reliable varieties of crops coming from the garden to the kitchen throughout the season.


Foraging

We are lucky to have a few small, established orchards that give us fresh plums, peaches, cherries, apricots, apples, and pears! When possible, we also source vegetables and fruits from other local farmers that are able to grow different varieties. Our unique desert-mountain environment lends itself well to responsible foraging of plants like mint, cattail shoots, sumac berries, juniper berries, and much more.

Grass-fed, Grass-finished

In addition to the crops we grow right here in Salt Gulch, we also raise cattle at our ranch in North Boulder. All the steaks and beef at Sweetwater Kitchen are grass-fed, grass-finished and rotationally grazed on our pastures for the entirety of their life. Before the animals arrived we took 3 years of preparation to ensure they had the best living conditions. The soil was amended, select grasses planted to ensure they had a nutrient dense and diverse food The animals are raised with love and respect, weaned off their moms naturally, not branded, not moved with any aggression just simple calls to move them from one lush pasture to the next.
